Introducing (in alphabetical order … bugger I’m still last)…
Dante Ruaine (aka. Theo) - Dante’s going to be be running the front-of-house operations. He’s currently at Pelican looking after the booze there. He came to Melbourne when Hairy Canary was new and rocking at worked there when Matt McConnell (Bar Lourinha) was head chef there. Since then he’s worked in heaps of great places like MoVida, Verge & Luxe (when it was new) as well as a stint in Whistler at ????. He was the Age Good Bar Guide inaugural (is that how you spell it??) bartender of the year. 1999??? or 2000??? or something.
Daniew Wilson (aka. Denise oh she’s so sexy) – Dan the man used to come in off his rocker when Dante & Jeff were there. Well Dan will be the Man in the kitchen at Huxtable. Dan has worked all over the place & with great chef’s. He trained with Andrew Blake at Blakes. He lauched Blakes Kitchen in Greville St & Arantji for Jacques Reymond in Fed Square. He’s currently head chef at the Graham in Port Melbourne. He was also the Age Good Food Guide co-young chef of the year in 2003.
Jeff Wong (aka. Vanessa – the sensible one) – Jeff rocks & is unreal and had nothing to do with the writing of this hmmm. GO PIES. Anyway, Jeff’s the bi-atch/secretary or back-(far back)of house guy & coffee guy. Jeff met Dante when they worked at the Hairy. He worked with the group for 3 years then went to Circa the Prince where he worked in the bar. He then set up his own cafe in the Husk retail stores. One cafe became two at Husk then in 2008 he opened Nineteen Squares in Blessington St, St Kilda with David Cox. He gave the Husk Cafes up later that year. Then at the end of last year he joined up with Dante & Dan and the old crew were back together – (for work & still a bit of play.)
Congratulations for starting this blog. Wish you all the best for Huxtables. I like the name a lot! It has potential, as it’s very unique but easy to remember. Now do the same with the food
